Chef Danny Africano grew up in the restaurant business. His Italian father and Irish mother had a popular restaurant at Slatefort House outside Loughrea in County Galway, which they closed in 2010 after Danny’s dad Rosario returned to Italy to take over his own late father Franco’s busy hotel.

Lignum — the Latin for wood, referencing the kitchen’s chosen way to cook, over fire using a variety of woods — opened in September of 2019, showcasing the quality and diversity of produce from the wonderful people who raise, grow and make them. An ambitious but approachable destination restaurant with an authentic story, Lignum also features, understandably, many Italian techniques and ingredients on menus that are a genuine reflection both of place and of Danny’s background.
